The Basics: Buttermilk Drop Biscuits π§

INGREDIENTS π
2 cup flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon sugar
3/4 cup buttermilk -OR- milk
1/2 cup unsalted butter (1 stick), melted
INSTRUCTIONS π©πΌβπ³
Pre-heat your oven to 425Β°.
Line a 17β x 11β baking sheet with parchment paper or aluminum foil.
In a large mixing bowl, whisk 2 cup flour, 1 tablespoon baking powder, 1/4 teaspoon sugar, and 1/4 teaspoon salt.
Add 3/4 cup buttermilk and 1/2 cup melted unsalted butter and mix until well-combined.
Using a tablespoon, or an ice cream scoop if you must (see below), divide batter into (12) and drop onto your baking sheet.
Bake for 10 minutes in your 425Β° pre-heated oven.

The Bougee: Spicy Pesto Salmon πΏ

Cook Time: 10 minutes

INGREDIENTS π
2 cups fresh basil leaves
1/8 cup almonds, toasted
1/4 cup Parmesan, grated
1 jalapeΓ±o, chopped
4 garlic cloves
1/4 teaspoon salt
1/3 cup olive oil
4 salmon fillets, boneless & skinless
1/4 cup Panko breadcrumbs
INSTRUCTIONS π©πΌβπ³
Pre-heat your oven to 400Β°.
Line a 17β x 11β baking sheet with parchment paper or aluminum foil, and spray with nonstick cooking spray.
In a food processor, combine 2 cups fresh basil leaves, 1/8 cup toasted almonds, 1/4 cup grated Parmesan, 1 chopped jalapeΓ±o, 4 garlic cloves and 1/4 teaspoon salt and pulse until a coarse paste forms.
Slowly add 1/3 cup olive oil until well-incorporated (if your food processor has an opening that allows it, add the oil in a steady stream as the machine is running, otherwise add the oil bit by bit in-between pulses).
Place the 4 boneless & skinless salmon fillets on your lined baking dish. Divide your pesto equally and spread across the entire tops of the salmon fillets.
Sprinkle 1/4 cup Panko breadcrumbs over your coated salmon fillets, about 1 tablespoon per filet.
Bake for 10 minutes in your 400Β° pre-heated oven, depending on the thickness of the filet, until the thickest part of the fish flakes easily with a fork (see below).
π‘ Wanna be bougee but have *literally* no time? No, Iβm not going to tell you to use store-bought pesto. . . I promise the extra effort is SO worth it. Make the pesto as much as 2-3 days in advance and store it in the fridge so that itβs ready to go! β±οΈ
The Bite-Sized:
Wondering how to take your fave carb recipes to the next level β¬οΈ? BUTTERMILK!!! Youβve heard of it, but what actually is it? Like, is it literally just some butter π§ mixed with milk π₯, orβ¦?
Not exactly, but the name is relevant. Traditionally, buttermilk was the liquid that remained after churning cream into butter. Instead of this butter churning by-product, most of todayβs buttermilk is created separately by adding active cultures to fresh milk (similar to how yogurt is made).
The buttermilk you buy in-store today is thick, creamy and tangy, as well as available anywhere from non-fat to full-fat. Adding it to your batter for baked goods like bisuits, scones, muffins and cakes guarantees that they rise and come out fluffy, soft and moist.
Since itβs not the most common thing to have in your fridge, hereβs some ways to finesse 1 cup of buttermilk when you donβt actually have any. π
1 cup milk + 1 tablespoon lemon juice
1 cup milk + 1 tablespoon vinegar
1 cup milk + 1/2 tablespoon tartar
1 cup yogurt
1/4 milk -OR- water + 3/4 cup yogurt
1/4 milk -OR- water + 3/4 sour cream
Obviously buttermilk is the OG and is hard to replicate, but these substitutions are a great step-up from using plain milk (especially the yogurt options IMO). Plus, now you have no excuse to not try out my Buttermilk Drop Biscuits above βοΈ. Come on, you know you want to.
The Best:
I donβt know about you, but the only time I used to get smashed potatoes π₯ was when I paid an obnoxious amount πΈ for a small plate of them at a bougee restaurant. Now we can all be bougee (and get some frustration out π¨) at home with Delishβs Garlic Smashed Potatoes. π
